For every Christmas & birthday since I can remember, my brother has given me a chocolate orange. Sadly the novelty has worn off, but I still love the combination of orange & chocolate. These muffins are really zesty!

300g gluten free flour

2 organic eggs, beaten

60g golden caster sugar

Juice & rind of 2 oranges

80g dairy-free margarine, melted

4 tbsp soy milk

1 tsp baking powder

40g dark chocolate, chopped up

  1. Pre heat oven gas mark 4
  2. Combine the eggs with the sugar. Stir in the orange juice, rind & milk.
  3. Mix in the margarine, then the flour & baking powder.
  4. Stir in the chopped chocolate.
  5. Pour batter into a prepared 12 hole muffin pan & bake for 20-25mins.
