2/3 cup desiccated coconut
1 tbsp sugar
1 tbsp corn starch
1 egg white
1 tsp cinnamon
20g dark chocolate
1. Pre heat the oven 350F/180C/gas mark 4
2. Combine the coconut, sugar, corn starch, cinnamon together. Add in the egg white and mix well. Shape into small balls & place on a greased baking sheet.
3. bake for 10mins on gas mark 4, then reduce the heat to gas mark 2 & bake for a further 5 mins. Take out the oven & let it cool before coating them in chocolate.
4. Melt the chocolate in a bowl in the microwave on medium setting. Dip each macaroon in chocolate & set aside to solidify. Once cooled, enjoy with a cup of tea!
