Almond Sables (Gluten Free)

These sables have a lovely buttery flavour and a slight crunchy-chew to them. They are great to savour in preparation for any tedious tasks, admin in particular! Just make sure you don’t drop crumbs on your paper work, or greasy fingers on your computer keyboard. These simple biscuits are perfect with a robust milky cup of Lapsang tea.

50g butter at room temperature

35g sugar

30g ground almonds

50g cornmeal

1 tsp vanilla extract

½ tsp cinnamon

2 baking sheets

1. Cream the butter with the sugar

2. Mix in the remaining ingredients. Using your hands, roll the dough into walnut sized balls & place on to pre-greased baking sheets leaving space around each sable.

3. Chill in the fridge for about 1 hour.

4. In a preheated oven (gas mark 4), bake the biscuits for 15mins. The balls should spread out in the oven but somehow on this attempt they didn’t, but they still taste good! Leave to cool slightly before transferring them to a wire rack.

Makes 24 biscuits
