Pathiri (Daring Cooks Challenge April 2014)




Since becoming a mum, I now take any opportunity to get ahead of myself when the little one is napping, or happily playing on her own. In the evenings when I pass the ‘bundle-of-joy’ to my husband, my arms work at lightning speed as I prepare dinner, lunch & breakfast simultaneously.

This month’s challenge was made over 2 days – filling the day before, pancakes the next morning whilst eating breakfast (I am used to constantly hopping back & forth from the kitchen now), and finally assembled in the evening.


Very unseasonal for April, I was inspired by Christmas dinner for my savoury pancake stack. I layered turkey mince, carrot & parsnips with sage & onion stuffing for my British take on this Indian dish. It had resemblance of a lasagne with a creamy coconut béchamel sauce. Very tasty, it was gobbled down by 2 hungry parents.

The April Daring Cooks Challenge was brought to us by Joanna from What’s On The List. She taught us all about Pathiri and challenged us to create our own version of this inspirational Indian dish!
